Snail caviar is becoming more and more popular in the world, especially in France, Spain and Italy. It is a luxury product as a snail would lay only 4 grams of eggs a year. Snail caviar is very rich in albumen, calcium, magnesium and other microelements. These elements do a lot of good to the human organism as they have not only nutritional but also curative qualities. This product is also used in medicine and cosmetics industries. Ages ago rich Romans and Egyptians enjoyed snail meat and caviar. The Greethese mother-of-pearls colour eggs „Aphrodite‘s pearls“ and considered them to have aphrodisiac qualities. Most of the organic snail growing farms cooperate with food research institutes in order to ensure high quality of the products.
Only excellent in colour and form eggs are collected manually with the help of pincette. It is a time consuming job requiring great accurateness. Then eggs are sterilized, dipped into light saline solution and closed in 40 gr glassware under vacuum.
Our company, which is an organic farm, is engaged in growing snails of species Helix aspersa maxima and production of snail caviar. We also have plans to develop our business into a bigger one.
